Well, Christmas is the time for German Christmas cookies! My personal favorites are the Zimtsterne – or cinnamon cookie stars. It takes a little patience to have a perfect result, but it is always worth it.

These are the ingredients:

  • 3 egg whites
  • 250 gr. powder sugar
  • 1 vial of bitter almond aroma (Dr Oetker)
  • 1 teaspoon of cinnamon
  • 300 gr. raw ground almonds

And here is how we do it:

Carefully separate the egg whites from the 3 eggs, making sure the yolks do not break or get in the whites. Then beat the whites until they foam or form peaks (do not over-beat!). Although it is easier to separate eggs when they are refrigerator-cold, I recommend letting the whites stand for a while at room temperature before whipping them.
Add the powdered sugar and beat again until it is dissolved. Reserve 2 tablespoons in a bowl (for the frosting). In the remaining mixture, add the almonds, the cinnamon and the bitter almond. Beat until all is combined and roll out the dough onto powdered sugar so that it won’t stick.
Use a star-shaped cookie cutter to cut stars out of the dough. Brush on the egg whites you had held aside (with a pastry brush or with a knife).

If the egg white for the frosting is not enough for all your star cookies, whip one more egg white with 1/3 of the original powdered sugar (meaning about 85 gram.)

Bake on the bottom rack of your oven

  • for 20 minutes at 130 degrees (up and down without air) or
  • for 15 minutes at 150 degrees with air

It is very important that the oven is not too hot and that the baking tray is on the bottom rack of the oven. Otherwise, the stars will turn brown on the top really quickly! If however this happens, place some baking paper on top of the stars.
Let the star cookies cool completely before storing them in a container – or eat half of them while waiting!
